Curious food #5: Your Happy Canadian Thanksgiving!

I am rather surprised that I have no Thanksgiving related food in the Cabinet of Food Curiosities. An appalling gap that needs to be filled! But in honour of Thanksgiving, I did find some turkey recipes in one of my useful and curious cookbooks: The Culinary Arts Institute Encyclopedic Cookbook 1950 edition.

I love the illustration for the title page – it is so beautiful and wholesome and perfect for this time of year.

The cookbook is set up so that each chapter begins with the word “Your”, presumably to make you feel that this is a cookbook that you simply must have for your own. I used “Your Index” to locate a few turkey-related items (or rather,  “My Index”, not “Yours”, although a copy could have been yours if you or your ancestors had just thought to buy one that you could have as your very own).

“Your Poultry” section provides you with 250 ways to prepare the poultry of your choice. Please note that if you were unable to secure your turkey for your Thanksgiving dinner, opossum is offered as a valid alternative, and your cookbook has a recipe for your opossum stuffing.

Should you wish to de-bone and roll your turkey, instructions are available for that too. It is a bit unsettling how nasty and unappetizing black & white photographs of food can be. But then so can colour (see end of post).

Knowing how to de-bone a turkey is particularly valuable if you wish to go all out and make a Turducken for Thanksgiving. Or an Opducken if you choose the  Thanksgiving opossum instead of turkey. In the spirit of Turducken, you could also make a Cherpumple pie-cake for dessert a la Charles Phoenix.

Your Culinary Arts Institute Encyclopedic Cookbook has included many excellent tips as well as recipes. Your Fine Art of Carving chapter is most helpful at this time of year. Note the maid in the background. She would be most helpful too.

Of course, leftovers are one of the many glorious aspects of Thanksgiving dinner. Turkey a la King is always a  family favorite. Unless it looks like this. I guess in 1950, colour reproduction technology was a few years away from splendid.

    I’m thankful I don’t have to eat turkey a la king or opducken or wear a suit to thanksgiving dinner.

    Is that a rainbow in the first picture? Why is it so monochromatic?

    Yes that is a rainbow, and I just looked at the cookbook again. The bottom of the rainbow does have some blue-green but it is very faint. You can see the blue-green in the scan if you enlarge it. Perhaps another victim of 1950 colour reproduction technology.

    If anyone out there has the box from their turducken maybe they could donate it to your cabinet.
